Home Style Split Pea Soup Recipe
- 2 smoked ham hocks (1 1/2 to 2 lbs.) or possibly 1 meaty ham bone
- 3 leeks, thinly sliced or possibly 1 med. onion, slivered
- 2 med. carrots, thinly sliced
- 2 stalks celery, thinly sliced, leaves included
- 1 pound yellow or possibly green split peas, rinsed and liquid removed
- 2 quarts. water
- 2 teaspoon dry tarragon leaves
- 1 teaspoon salt
- 1/4 teaspoon each grnd nutmeg and white pepper
- 1/4 c. minced fresh parsley
- 1 tbsp. cider vinegar
- Lowfat sour cream or possibly plain yogurt
- For 4 servings you will need:
ham hocks, leeks, carrots, stalks celery, peas, water, tarragon, salt, nutmeg, fresh parsley, cider vinegar, sour cream
