sausage and spaghetti
- 1 packages hot or sweet italian sausage
- 2 cup diced tomatos
- 1 can tomato sauce
- 1 1/2 large onion
- 5 clove garlic
- 1 1/3 dash oregano
- 2 2/3 pinch of pepperonchino
- 1 1/4 dash fennel seeds crushed in hand
- 2 3/4 dash basil
- 1 1/3 pinch chopped rosemary
- 1 1/3 cup olive oil
- 1 1/4 capers
- 1 1/4 can kalamata olives
- 1 pinch of salt or whatever desired
- 1 dash black pepper crushed
- 1 1/2 cup pasta water, to stick nicley to noodles
- 1 1/3 can anchovies if desired
- 3 each bayleaves
- 2 1/2 cup parmeasano reggiano
- 1 2/3 packages spaghetti noodles or linguini
- cook sausages in medium cooking pan, throw in extra onions and garlic to flavor.
- when sausage is done set aside with lid on to stay warm.
- in a large soup pot with about half full of water cook spaghetti noodles once getting a rolling boil.
- cook noodles until aldente.
- to tell when, take a noodle and throw it against the wall if it sticks it's done.
- in preheated medium sauce pot , toss in onions garlic spices bayleaf and saute until semi soft and brown.
- add anchovies cook for 1 min ,then add tomatoes cook until semi soft then add tomato sauce.
- stir in more of whatever seasoning desired salt and pepper to taste.
- tasting before taking sauce off
- when noodles and sauce are done set noodles on plate then putt noodles on the bottom, then put sauce on top.
- drizzle on olive oil and parmesano reggiano and serve.
