Chinese Goji Berry & Tomato Medicinal Soup

  1. These are the dried goji berries.
  2. You can also use them dried in desserts.
  3. I used these for this simmered dish.
  4. Season the chicken drumsticks with the dried herbs, salt, and pepper.
  5. Marjoram helps with digestion.
  6. Cut the onion into 5mm slices.
  7. Wash and tear apart the maitake.
  8. Chop the tomatoes.
  9. You can leave the skin on or peel, whichever you prefer.
  10. Heat olive oil in an enamel pot.
  11. Add the chicken drumsticks and cook lightly.
  12. When the chicken begins to lightly change color, add the water.
  13. Cover with a lid and leave it until it begins to boil.
  14. Once it begins to boil, drop the heat to low.
  15. Add, in order, the tomato, maitake mushrooms, and goji berries.
  16. Cover with a lid and simmer for 15-20 minutes.
  17. Season with salt, pepper, and soy sauce.
  18. Stop the heat and let it steam for a short time to finish.
  19. Garnish with digestion aiding and mineral filled parsley and then enjoy.
  20. The chicken will become so tender and delicious.
  21. You can also enjoy the goji berries.
