Chinese Goji Berry & Tomato Medicinal Soup
- 4 Chicken drumettes - the first (thickest) joint of a chicken wing
- 1 pack Maitake mushrooms
- 1/2 Onion (large)
- 1/2 Tomatoes (large)
- 1 tabespoon Goji berries
- 200 ml Water
- 1 tsp Salt
- 1 pinch Black pepper
- 2 tsp Soy sauce
- 1 Dried herbs (marjoram, oregano)
- 1 Fresh parsley
- 1 tbsp Olive oil
- These are the dried goji berries.
- You can also use them dried in desserts.
- I used these for this simmered dish.
- Season the chicken drumsticks with the dried herbs, salt, and pepper.
- Marjoram helps with digestion.
- Cut the onion into 5mm slices.
- Wash and tear apart the maitake.
- Chop the tomatoes.
- You can leave the skin on or peel, whichever you prefer.
- Heat olive oil in an enamel pot.
- Add the chicken drumsticks and cook lightly.
- When the chicken begins to lightly change color, add the water.
- Cover with a lid and leave it until it begins to boil.
- Once it begins to boil, drop the heat to low.
- Add, in order, the tomato, maitake mushrooms, and goji berries.
- Cover with a lid and simmer for 15-20 minutes.
- Season with salt, pepper, and soy sauce.
- Stop the heat and let it steam for a short time to finish.
- Garnish with digestion aiding and mineral filled parsley and then enjoy.
- The chicken will become so tender and delicious.
- You can also enjoy the goji berries.
