Indian-Inspired Chicken Kabobs
- 1/2 cup KRAFT Original Barbecue Sauce
- 3 Tbsp. lemon juice, divided Safeway 4 ct For $5.00 thru 02/09
- 1-1/2 tsp. curry powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground red pepper (cayenne)
- 1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1/2 cup finely chopped peeled seeded cucumbers
- 1 Tbsp. finely chopped fresh mint
- 1 clove garlic, minced
- Mix barbecue sauce, 2 Tbsp.
- lemon juice, curry, cumin and pepper; pour half over chicken in shallow glass dish.
- Stir.
- Refrigerate 20 min.
- to marinate.
- Heat grill to medium heat.
- Remove chicken from marinade; discard marinade.
- Thread chicken onto 6 skewers alternately with onions.
- Grill 8 to 10 min.
- or until chicken is done, turning occasionally and brushing with remaining barbecue sauce mixture.
- Meanwhile, combine remaining lemon juice, sour cream, cucumbers, mint and garlic.
- Serve with kabobs.
