Simple Japanese Stock

  1. Wipe kombu with a damp cloth.
  2. Place all ingredients in a soup pot.
  3. Bring to a boil.
  4. Remove from heat
  5. Let steep for 1/2 hour.
  6. Strain and refrigerate for up to 5 days.
