Beef Tenderloin Stuffed With Lobster Recipe

  1. Preheat oven to 425 degrees.
  2. Bring lobster tails to a boil in salted water and cover.
  3. Reduce heat and simmer for 5 to 6 min.
  4. Cut lobster tails in half lengthwise and remove meat.
  5. Place lobster end to end inside beef.
  6. Combine 1 Tbsp.
  7. butter and lemon juice and drizzle over lobster.
  8. Tie roast together securely at one inch intervals.
  9. Place on a rack in a shallow roasting pan.
  10. Roast for 30-40 min for medium done beef.
  11. Lay bacon strips on top of roast and bake for 5 min.
  12. In a saucepan simmer green onion and 1/2 c. butter till tender.
  13. Stir in wine and garlic salt and bring to a boil.
  14. To serve, slice roast and spoon on wine sauce.
  15. Garnish platter with fluted whole mushrooms and watercress.
