Russian Cabbage Soup
- 1 12 quarts beef broth
- 1 (14 ounce) can diced tomatoes
- 6 cups thinly sliced red cabbage
- 4 large beets, peeled and cubed
- 1 cup sliced carrot
- 1 cup sliced onion
- 1 cup cubed turnip
- 1 cup cubed potato
- 1 tablespoon cider vinegar
- salt and pepper
- 8 tablespoons sour cream
- Combine all ingredients except salt, pepper and sour cream in slow cooker.
- Cover and cook on low for 6-8 hours.
- Season to taste with salt and pepper.
- Serve each bowl with a dollop of sour cream.
