Sauteed Cole Slaw on Noodles

  1. Bring large pot of lightly salted water to a boil over medium-high heat.
  2. Cook noodles according to package directions, or until tender.
  3. Remove from heat, drain, rinse and drain again.
  4. Set aside.
  5. Meanwhile, heat vegetable oil in large skillet, and saute onion until just golden, about 5 minutes.
  6. Add seitan to skillet, and saute 2 to 3 minutes, or until just golden.
  7. Add apple juice and slaw mixture, and cook until slaw softens, 5 to 7 minutes.
  8. Stir in celery seeds, salt and pepper.
  9. Remove from heat, and serve over noodles.
