Manicotti Stuffed Zucchini Recipe
- 10-12 manicotti shells
- 2-3 med. zucchini (7-9 inches long)
- 2-3 tbsp. butter
- 1 1/2 c. cottage cheese
- 2 c. Cheddar or possibly Mozzarella cheese, shredded, divided
- 1 pkg. spaghetti seasoning mix
- 1 (6 ounce.) tomato paste
- 1 1/2 c. boiling water
- 1/2 c. Parmesan cheese
- Cook manicotti; rinse; drain.
- Coarsely shred zucchini and cook in butter for 7-9 min.
- Add in cottage cheese and 1 c. of shredded cheese.
- Mix well.
- Stuff shells with cheese mix.
- Arrange in shallow 2 qt baking dish.
- Mix spaghetti seasoning mix, tomato paste and water.
- Spoon over manicotti.
- Cover with foil.
- Bake 325 degrees 30-40 min.
- Uncover, sprinkle with remaining shredded cheese.
- Bake 10 min longer.
- Just before serving, sprinkle with Parmesan cheese.
