Manicotti Stuffed Zucchini Recipe

  1. Cook manicotti; rinse; drain.
  2. Coarsely shred zucchini and cook in butter for 7-9 min.
  3. Add in cottage cheese and 1 c. of shredded cheese.
  4. Mix well.
  5. Stuff shells with cheese mix.
  6. Arrange in shallow 2 qt baking dish.
  7. Mix spaghetti seasoning mix, tomato paste and water.
  8. Spoon over manicotti.
  9. Cover with foil.
  10. Bake 325 degrees 30-40 min.
  11. Uncover, sprinkle with remaining shredded cheese.
  12. Bake 10 min longer.
  13. Just before serving, sprinkle with Parmesan cheese.
