Balsamic Marinated Pork Medallions Recipe
- 1 Tbsp. vegetable oil
- 4 x boneless (6 ounce. each) center cut pork chops, 1 to 1 1/4 inches thick Salt Freshly grnd pepper
- 1/3 c. balsamic vinegar
- 1 Tbsp. soy sauce
- 1 Tbsp. butter or possibly margarine
- 1 lb fresh spinach, stems removed

- Heat oven to 400 degrees F.

- Heat oil in large ovenproof skillet over medium-high heat 1 minute.
- Sprinkle pork with 1/2 tsp.
- salt and 1/4 tsp.
- pepper.
- Brown pork 3 min per side; add in vinegar and soy sauce.
- Bake 8 to 12 min, till instant-read meat thermometer inserted in center of one chop reaches 155 degrees F. With slotted spoon, transfer pork to cutting board.
- Transfer sauce to bowl; keep hot.

- Add in butter and spinach to skillet.
- Cook over medium-high heat 1 minute, till spinach wilts.
- Sprinkle with a healthy pinch each salt and pepper.
- Slice pork and arrange on 4 serving plates.
- Serve with spinach and balsamic sauce.
