Delicious Stir-Fried and Simmered Beef and Bamboo Shoot (Shigure-ni)
- 400 grams Sliced beef
- 1 bag Bamboo shoots cooked in water (canned or vacuum packed)
- 4 tbsp Soy sauce
- 3 tbsp Sake
- 3 tbsp Sugar
- 1 tbsp Mirin
- 3 cm Ginger paste in tube
- 100 ml Dashi stock
- 1 tbsp Sesame oil
- 3 tbsp roasted light brown sesame seeds
- 1 Salt
- Preparation: Cut the beef to 3 cm pieces.
- Slice the bamboo shoots to about 2 to 3 mm thickness.
- Mix all the ingredients.
- Heat a pan with sesame oil, cook the beef and bamboo shoots on high heat.
- When the beef has browned a bit, pour in the dashi stock and keep cooking.
- When the beef has completely browned, pour the ingredients over it and keep cooking until the moisture in the pan is almost gone.
- Sprinkle sesame seeds and mix.
- It's done Season with salt if needed.
