Chinese Hoisin Glaze for Chicken

• 13 cup hoisin sauce
• 13 cup ketchup
• 14 cup wine
• 1 tablespoon water
• 2 teaspoons ginger, grated

1. Mix and simmer over low heat for 5 minutes.
2. Glaze chicken in the last few minutes of barbecuing.
3. Serve remaining glaze as accompanyment.
