Delicious Barley Mushroom Casserole

  1. Preheat oven to 350F (180C).
  2. Melt butter in a large casserole.
  3. Saute onions 2 minutes over medium heat.
  4. Add mushrooms and saute 5 to 7 minutes more.
  5. Add barley.
  6. Cook until lightly browned.
  7. Add 2 cups of broth, salt and pepper.
  8. Bring to a boil.
  9. Cover, and bake in the oven for 45 minutes.
  10. Add remaining 1 cup of broth.
  11. Return to oven and bake 45 minutes more.
  12. Garnish with chopped parsley.
