Very veggie spaghetti

  1. In large skillet, cook mirepoix mix until soft.
  2. Sprinkle with red pepper flakes, and garlic, if desired
  3. Add mushrooms and beans, cook until heated through.
  4. Season with oregano and basil.
  5. Add spaghetti sauce and cook for 10 minutes
  6. While sauce is cooking, use vegetable peeler or mandoline to create spirals from the zucchini (zucchini pasta).
  7. Microwave to desired doneness (I heat for 30 seconds).
  8. Serve sauce over zucchini pasta.
