Very veggie spaghetti
- 1 packages frozen mirepoix style mix
- 4 oz low soduim mushrooms
- 15 oz cannellini beans ( drained)
- 1 tsp oregano
- 1 tsp basil
- 24 oz Prego traditional spaghetti sauce
- 2 large zucchini
- In large skillet, cook mirepoix mix until soft.
- Sprinkle with red pepper flakes, and garlic, if desired
- Add mushrooms and beans, cook until heated through.
- Season with oregano and basil.
- Add spaghetti sauce and cook for 10 minutes
- While sauce is cooking, use vegetable peeler or mandoline to create spirals from the zucchini (zucchini pasta).
- Microwave to desired doneness (I heat for 30 seconds).
- Serve sauce over zucchini pasta.
