Creamy Chicken Chowder
- 1 lb chicken breast, cut in 1/2 inch pieces
- 1 (11 ounce) canwhole corn with sweet peppers
- 1 (10 ounce) can cream of potato soup
- 1 (4 ounce) candiced green chili peppers
- 2 tablespoons snipped fresh cilantro
- 1 (1 1/4 ounce) package taco seasoning mix
- 3 cups chicken broth
- 8 ounces sour cream
- 4 ounces process cheese spread with jalapeno peppers, cubed
- In slow cooker combine chicken, corn, soup, chile peppers, cilantro and taco seasoning mix.
- Stir in broth.
- Cover and cook on low for 4-6 hours or high 2-3 hours.
- Stir about 1 cup of the hot soup into the sour cream.
- Stir sour cream mixture and cheese into slow cooker.
- Cover and let stand for 5 minutes.
