Whole Grain Banana Bread Recipe
- 4 RIPE bananas
- 1 1/2 c. sugar
- 4 tbsp. soft vegetable shortening
- 2 Large eggs
- 1 1/2 c. lowfat milk or possibly orange juice
- 2 teaspoon salt
- 2 1/3 tbsp. baking pwdr
- 2 c. unbleached flour
- 2 c. whole wheat flour
- 1 1/2 c. oatmeal
- 1/2 c. wheat germ
- 1 1/2 - 2 c. raisins
- or possibly minced nuts or possibly
- minced dates or possibly
- minced prunes
- Mix wet ingredients well.
- Mix dry ingredients thoroughly.
- Add in dry ingredients to banana mix.
- Grease loaf pan (9x5x3).
- Pour the batter into the pan, spreading it higher in the corners with the scraper.
- Let stand for 20 min while oven heats.
- Bake 1 hour to 1 hour and 10 min in 350 degree F. oven.
- Makes 2 loaves.
- This is NOT a sweet bread.
