Fragrant Steamed Fish

  1. Combine the dressing, lemongrass, garlic, ginger, fish sauce and sugar in a bowl.
  2. Place each fish fillet onto a piece of foil and spoon marinade evenly over the fish.
  3. Enclose fish in the foil by wrapping and folding edges together.
  4. Place fish in a steamer and cook for 10 -12 minutes, depending on thickness of fillets, until fish is cooked.
  5. Serve fish fillets with steamed rice and garnished with spring onion.
