Orchard Applesauce

  1. Peel and core apples; cut into big chunks.
  2. Place in a medium saucepan and toss with lemon juice.
  3. Add cider, sugar, and cinnamon; bring to a boil.
  4. Reduce to a simmer and cook until tender, about 15 minutes.
  5. Let cool 20 minutes.
  6. Discard cinnamon.
  7. Mash to the consistency you prefer.
  8. Stir in brandy.
  9. Cool to room temperature; then cover and refrigerate.
