Easy Chicken Corn Chowder
- 1 lb To 1-1/2 lb chicken breast, cut into bite size pieces
- 2 clove Garlic minced/chopped
- 1 Chopped onion or 1/3 or so bag frozen chopped onion
- 1 can Chicken broth
- 1 can Creamed corn
- 2 can Sweet corn
- 2 can Whole white potatoes, cubed
- 2 tsp Black pepper
- 2 tsp Seasoning salt
- 1/2 tsp Chili powder
- 1 cup Heavy cream
- 3/4 cup Mashed potato flakes
- 1/4 cup Cooked bacon pieces (NOT "bacon bits")
- Place a large pot on stove and turn burner on (high or medium-high).
- Allow to heat for about 2 minutes.
- Spray bottom of pot with cooking spray.
- Add onion and garlic and sautASe for 1-2 minutes.
- Add chicken and cook through.
- Add chicken broth, corn, creamed corn, potatoes, and seasonings to pot.
- Simmer for about 10 minutes.
- Add bacon, instant potatoes, and cream.
- Mix well and heat for 5 minutes.
