Crockpot stuffed peppers
- 6 bell peppers. any color you prefer
- 2 lb ground beef
- 1 can spanish rice
- 1 can rotel
- 1 envelope taco seasoning
- 2 cup mexican blend cheese
- Cut tops off peppers and remove insides
- Mix ground beef, rice, and taco seasoning in mixing bowl
- Fill peppers with mix.
- You shouldn't have any left over.
- Stuff them!
- Place filled peppers in crock pot
- Spoon a little rotel on top of each pepper.
- Pour remainder into bottom of crockpot (gives a little extra juice)
- Cook on low 6-8 hours and high 3-4 hours.
- (The uncooked meat will cook the pepper.
- No need to precook the beef or add any liquid)
- 20-30 minutes before meal time add cheese on top of each pepper.
- Enjoy!
