Mint Ice

  1. In a pot, combine sugar with 2 cups water, and bring to a boil, stirring until sugar is dissolved.
  2. Let cool.
  3. Bring a pot of water to a boil.
  4. Fill a large bowl with water and ice.
  5. Plunge mint, stems and all, into boiling water for 10 seconds.
  6. Remove mint to ice water.
  7. Let cool.
  8. Squeeze excess water from mint; puree with syrup in a blender.
  9. Strain through a fine sieve.
  10. Transfer to a covered container, and freeze until solid, at least 4 hours.
