Mom's Vegetable Beef Soup
- 2 lb stew beef
- 2 quart water
- 1 tbsp salt
- 1 1/2 cup chopped onion
- 3 carrots, cut into 1 inch pieces
- 3 stalks celery, cut into 1 inch pieces
- 1 can corn, drained
- 2 can Veg-All mixed vegetables
- 1 (28 oz )can tomatoes, chopped and undrained
- 2 tbsp chopped parsley
- 1 (6 oz) can tomato paste
- 4 potatoes, cubed
- Combine stew beef, water and salt in large pain.
- Cover and bring to a boil
- Add onions, carrots,celery and tomatoes; return to a boil
- Lower heat; cover and simmer 30 minutes
- Add potatoes, parsley, and tomato paste and simmer 3 hours
- Add mixed vegetables, corn and a dash of Worcestershire sauce and simmer 30 minutes
