Cactus Salsa Recipe
- 1 jar Nopalitos (cactus) - (12 ounce)
- 1 sm Jicama
- 2 x Tomatoes
- 1 x Jalapeo
- 2 x Green onions
- 1/3 bn Cilantro
- 1/2 tsp Salt
- Rinse the nopalitos well, and cut into small pcs, about the size of a corn kernel.
- Place the cactus in a bowl.
- Peel the jicama and dice.
- Add in the jicama to the cactus.
- Cut the tomatoes in half and remove the seeds.
- Chop the tomatoes and add in to the cactus and jicama mix.
- Cut the meat off the jalapeo, throw away the skin, mince, and add in to cactus mix.
- Mince the green onions and cilantro, and add in to mix.
- Add in salt and blend well.
- Refrigerateand serve.
- Yields 1 jar.
