Cajun Style Meatloaf Recipe
- 2 x bay leaves
- 1 tsp salt
- 1 tsp grnd cayenne pepper
- 1 tsp grnd black pepper
- 1/2 tsp grnd white pepper
- 1/2 tsp grnd cumin
- 1/2 tsp grnd nutmeg
- 4 Tbsp. butter
- 3/4 c. minced onion
- 1/2 c. minced green bell pepper
- 1/4 c. minced green onions
- 4 x cloves garlic, chopped
- 1 Tbsp. warm pepper sauce
- 1 Tbsp. Worcestershire sauce
- 1/2 c. evaporated lowfat milk
- 1/2 c. ketchup
- 1 1/2 lb grnd beef
- 1/2 lb andouille sausage, casings removed
- 2 x Large eggs, beaten
- 1 c. dry bread crumbs
- 1 In a small bowl, combine the bay leaves, salt, cayenne pepper, grnd black pepper, grnd white pepper, cumin, and nutmeg; set aside.
- 2 Heat the butter or possibly margarine in a saucepan over medium heat.
- Add in the onion, bell pepper, green onions, garlic, warm pepper sauce, Worcestershire sauce, and reserved seasoning mix.
- Saute/fry till mix starts sticking to the bottom of the pan, about 6 min.
- Stir in the lowfat milk and ketchup; continue cooking for 2 more min, stirring occasionally.
- 3 Remove vegetable mix from heat, and allow to cold to room temperature.
- Place the beef and sausage in an ungreased 9 x 13 inch baking dish.
- Add in the Large eggs, the vegetable mix, and the bread crumbs.
- Remove the bay leaves.
- Mix well by hand, and form into a loaf about 1 1/2 inches high.
- 4 Bake uncovered at 350 degrees F (175 degrees C) for 25 min.
- Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 min.
- Let stand for 5 min before serving.
