BBQ Bhuna Chicken
- 1/4 cup Bull's-Eye Chicken & Rib Renegade Barbecue Sauce
- 1 tsp. each ground coriander, ground cumin, garam masala, and corn starch
- 1/2 tsp. red chili powder or cayenne pepper
- 1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
- 1 Tbsp. oil
- 1/2 cup finely chopped yellow cooking onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. finely grated gingerroot
- 2 cloves garlic, finely grated
- 1/2 tsp. cumin seed
- 2 green onions, thinly sliced
- 2 Tbsp. chopped fresh coriander (cilantro)
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- Mix barbecue sauce, ground coriander, cumin, garam masala, corn starch and chili powder until blended.
- Add to chicken in large bowl; toss to coat.
- Heat oil in large skillet on medium-high heat.
- Add next 4 ingredients; cook and stir 5 min.
- or until onions are crisp-tender.
- Add chicken mixture; cook 10 min.
- or until chicken is done and sauce is thickened, stirring frequently.
- Remove skillet from heat.
- Stir in remaining ingredients.
