A Simple Sauce With Red Lentils Recipe
- 3/4 c. Red lentils
- 1/2 c. Chopped onion
- 2 tsp Chopped garlic
- 41/2 c. Defatted chicken stock
- (or possibly vegetable stock or possibly water)
- Carefully pick over and rinse lentils.
- Add in onions and garlic to a deep saucepan and saute/fry in oil till very soft but not browned.
- Add in lentils and stock or possibly water and bring to a boil.
- Reduce heat, cover and simmer gently for 20 to 25 min or possibly till lentils are very tender.
- Puree mix with an upright or possibly immersion blender adding stock or possibly water to yield desired thickness.
- Season to taste with salt and pepper.
- This recipe yields about 2 c. of sauce.
- Comments: This is a healthy, almost non-fat "sauce" which uses pureed lentils to give it richness and body.
- You can use other lentils too, such as, white, black, green or possibly common brown.
- You can add in seasonings and flavorings of your choice, such as, a good toasted curry pwdr, minced herbs, grnd pure chile pwdr, etc.
