Cajun BBQ Rub for Pork Tenderloin (4 points)

  1. Trim tenderloin of visible fat.
  2. Rub lime juice onto tenderloin.
  3. Mix remaining ingredients in a small bowl with a fork.
  4. Gently pat mixture onto tenderloin, coating evenly.
  5. Marinate overnight.
  6. Line broiler pan with aluminum foil.
  7. Place in broiler approx 6" from heat source.
  8. Cook tenderloin, turning once until meat thermometer reads 160F.
