Cajun BBQ Rub for Pork Tenderloin (4 points)
- 1 1/4 lb Pork Tenderloin
- 2 tsp Lime Juice
- 2 tsp Paprika
- 1 tsp Brown Sugar (packed)
- 1 tsp Celery Seed
- 1 tsp Ground Sage
- 1/4 tsp Garlic Powder
- 1/4 tsp Cayenne Peper
- 1/4 tsp Black Pepper
- Trim tenderloin of visible fat.
- Rub lime juice onto tenderloin.
- Mix remaining ingredients in a small bowl with a fork.
- Gently pat mixture onto tenderloin, coating evenly.
- Marinate overnight.
- Line broiler pan with aluminum foil.
- Place in broiler approx 6" from heat source.
- Cook tenderloin, turning once until meat thermometer reads 160F.
