Blue CheeseStuffed Celery
- 4 oz. blue cheese
- 2 oz. reduced-fat cream cheese (Neufchatel)
- 2 tbsp. whole milk
- Pepper
- 9 stalk celery hearts
- 1/2 c. dried chopped Calimyrna figs
- 1 tbsp. pure honey
- snipped chives
- In medium bowl, with mixer on high speed, beat blue cheese and cream cheese until smooth.
- Add milk and 1/4 teaspoon freshly ground black pepper.
- Beat until well combined.
- Cover and refrigerate 30 minutes or up to 2 hours.
- Transfer cheese mixture to heavy-duty quart-size resealable plastic bag with one corner cut to form 1/2-inch hole.
- Pipe cheese mixture down centers of celery pieces.
- Top with figs and lightly drizzle with honey.
- Garnish with chives.
