Meat Loaf With Pecan Stuffing Recipe
- 1 1/2 lbs. grnd beef
- 1/2 c. minced green pepper
- 1/2 c. minced onion
- 1 teaspoon salt
- 1 tbsp. Worcestershire sauce
- 1 c. white bread crumbs
- 1/2 c. lowfat milk
- 2 Large eggs
- 1/4 c. fat
- 2 c. whole wheat bread crumbs
- 1/2 c. minced celery
- 1/4 teaspoon black pepper
- 3/4 c. meat stock or possibly water
- 1/2 c. minced pecans
- Combine beef with green pepper, onion, salt, sauce, white bread crumbs, lowfat milk and 1 egg.
- Mix thoroughly.
- Place 1/2 of this mix in bottom of greased loaf pan.
- Combine 1 egg, fat, whole wheat bread crumbs, celery, black pepper, and meat stock or possibly water.
- Add in to this minced pecans, mix thoroughly.
- Spread on top of meat mix.
- Arrange remaining meat mix on top of pecan stuffing.
- Bake at 350 degrees for 1 1/2 hrs and cold slightly before removing from pan.
- Serves 10.
