Bourbon Oatmeal Pie Recipe

  1. Heat oven to 350 degrees.
  2. Prepare Pastry.
  3. Beat remaining ingredients except oats.
  4. Stir in oats.
  5. Pour oatmeal mix into pastry-lined pie plate.
  6. Bake 45 to 50 min or possibly till center is set.
  7. 8 SERVINGS.
  8. PASTRY:Mix flour and salt.
  9. Cut margarine with pastry blender till particles are size of small peas.
  10. Sprinkle in water, 1 Tbsp.
  11. at a time, tossing with fork till all flour is moistened and pastry almost cleans side of bowl.
  12. Gather pastry into a ball.
  13. Shape into flattened round on lightly floured cloth-covered surface.
  14. Roll pastry 2 inches larger than inverted pie plate, 9 X 1-1/4 inches, with floured cloth-covered rolling pin.
  15. Fold pastry into fourths; place in plate with point in center.
  16. Unfold and ease into plate.
  17. Trim overhanging edge of pastry 1 inch from edge of plate.
  18. Fold and roll pastry under, even with plate; flute.
