Authentic Mushroom Curry Recipe fallingup

  1. Wash and slice the mushrooms.
  2. (Removing the stems is optional.)
  3. Slice the garlic and dice the onions.
  4. Place a wide, deep pan over medium to high heat and add the olive oil.
  5. When hot, add the onions and garlic and cook until golden.
  6. Add mushrooms.
  7. Cover and cook for 10-15 minutes.
  8. Uncover and season with salt, chili powder, and turmeric.
  9. Continue to cook for 10 minutes, stirring occasionally so the mushrooms dont stick or burn.
  10. The mushrooms will darken and reduce considerably.
  11. When almost all the liquid is evaporated from the pan, add ground coriander and lemon juice (if using) and stir to combine.
  12. Add cilantro leaves, remove from heat, and serve.
