Smoked Red Peppers and Feta Dip

  1. Place the whole peppers directly over a gas burner.
  2. When charred through, place in a plastic bag so that it would steam and the charred bits will wipe off.
  3. Saute the onion in the olive oil until very soft and light golden in colour.
  4. Rub the skins off the peppers, discard seeds and chop.
  5. Place in a blender and blend all the ingredients until smooth.
  6. Serve with toasted crusty bread or toasted pita bread slices.
