Zac's World Famous Christmas Frittata
- 1 Onion Chopped
- 1 Red Bell Pepper Chopped
- 1 Green Bell Pepper Chopped
- 1 dozen Eggs
- 30 oz Package Diced Hash Browns
- 1 packages Chrizzo Sausage
- 12 tbsp Milk
- 2 cup Shredded Sharp Cheddar
- 1 lb Bacon
- 1 tsp black pepper
- 1 tsp Salt
- 1 Vegetable Oil (2tbs +1/4 cup)
- Cook bacon in oven according to package directions.
- May need to be cooked in batches.
- Set aside.
- Preheat oven to 400
- Saute chopped peppers and onion in 2tbs vegetable oil on medium heat until softened.
- About 5 minutes.
- Set aside.
- Cook hash browns in 1/4 cup vegetable oil in 12" skillet until golden brown.
- Stirring and turning often.
- About 30 minutes.
- Set aside.
- Par cook chorizo on a skillet.
- 4 minutes each side on medium high heat.
- Set aside.
- Slice chorizo into 1/4 slices.
- In a large bowl.
- Beat eggs and 12 tbs of milk.
- Add salt and pepper.
- Stir.
- Spray 13x9 baking dish with nonstick spray.
- Add eggs to baking pan.
- Add peppers and onions.
- Add potatoes.
- Add chorizo.
- Stir well.
- Bake on middle rack for 30-40 minutes.
- Until eggs are hardened.
- Use paper towel to pat top of mixture to remove access sausage grease.
- Set oven to broil.
- Top mixture with cheese.
- Broil 5 minutes until cheese is golden brown.
- Remove from oven.
- Let sit for 5 minutes before serving.
- Serve with side of bacon.
