Braised Red Cabbage

  1. In large skillet over medium heat, melt butter.
  2. Add onions, and cook, stirring, until softened, about 3 minutes.
  3. Add apples, salt, pepper, cloves and cinnamon stick and cook, stirring, for 1 minute.
  4. Add cabbage, in batches, stirring until it begins to wilt before adding more.
  5. Stir in vinegar, coconut sugar and water.
  6. Transfer to a slow cooker.
  7. Cover and cook on high, stirring once or twice, for 3 hours, until cabbage is tender.
  8. Discard cinnamon stick.
