Seafood Potpie
- 1 8-ounce piece cod fillet
- 1 can whole new potatoes
- 1/2 lb. shelled and deveined shrimp
- 1 package frozen mixed vegetables
- 1 can condensed cream of shrimp soup
- 1/2 c. milk
- 2 tbsp. dry sherry
- 1 container refrigerated breadstick dough
- Preheat oven to 400 degrees F. With tweezers, remove any bones from cod fillet.
- Cut cod fillet and potatoes into 1-inch chunks.
- In 10-inch skillet over medium heat, heat cod, potatoes, shrimp, frozen mixed vegetables, undiluted cream of shrimp soup, milk, and sherry to boiling.
- Reduce heat to low; cover and simmer 5 minutes, gently stirring occasionally.
- Meanwhile, separate breadstick dough into 8 pieces, but do not unroll coils.
- Pour hot seafood mixture into a 9" by 9" glass baking dish.
- Arrange breadstick- dough coils on top of hot seafood mixture.
- Bake 15 minutes or until breadstick coils are golden brown and cooked through.
