Lemony Chicken a Dish of Fortunate Taste
- 4 lb roaster/fryer chicken
- 1 envelope dry Italian dressing
- 1 tsp seasonings salt (like Lawrey's)
- 2 1/2 tsp ground black pepper
- 2 1/2 tsp dry mustard
- 2 tsp granulated garlic
- 3 tbsp olive oil, divided
- 2 tbsp Butter, melted
- 1 juice of one lemon
- 1 small lemon, halved
- 1 small sweet onion, quartered
- Mix all dry ingredients in a small bowl.
- Wash chix & pat dry, place incontainer.
- Rub the chix with approximately 1Tbsp oil.
- Massage the dry ingredients into the chix and under the skin.
- Don't forget the under side and in the cavity.
- Cover and refrigerate overnight if you have time.
- (Truly recommended)
- Preheat oven to 350 Place chix in Dutch oven.
- Place lemon halves and onion quarters inside chix cavity.
- Mix melted butter, 2T oil & lemon juice.
- Drizzle mix over chix, massage in gently.
- Bake for 1 1/2- 2 hrs basting every 30 mins and once more before serving.
- (I leave the lid on my chicken for at least the first hour to build up the juices)
