Spicy Pickled Garlic

  1. Separate, but don't peel garlic cloves.
  2. Blanch in boiling water 1 minute.
  3. Strain and put into cold water.
  4. Peel cloves, and put in a clean jar.
  5. Add sugar, chile, oregano to jar.
  6. Boil vinegar, water, and salt in small pan.
  7. Pour boiling mixture over garlic to fill jar.
  8. Seal and refrigerate about a week, or at least a few days, before eating.
