6WBM Hash Brown Medley
- 4 small red potatoes, uncooked (about 3/4 lb.)
- 1 onion, chopped
- 4 egg whites
- 14 cup frozen mixed vegetables (white onions, green bell pepper, red bell pepper, parsley flakes)
- 18 cup no-salt-added chicken broth
- Saute chicken broth and onions in skillet until onions become soft.
- Add potatoes and cook until potatoes are tender.
- Add seasoning blend, stirring as needed until onions turn translucent.
- Add egg whites and mix, cooking until egg whites are at desired consistency.
