Whole Grain Apple Muffins Recipe
- 1 1/4 c. all-purpose flour
- 1 tbsp. baking pwdr
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 tbsp. brown sugar
- 2 c. Nutri-Grain cereal (any variety)
- 1 1/2 c. lowfat milk
- 1 egg
- 1/2 c. finely minced apples
- 3 tbsp. vegetable oil
- Stir together flour, baking pwdr, salt, cinnamon and sugar.
- Set aside.
- Combine Nutri-Grain cereal and lowfat milk in large mixing bowl.
- Let stand till cereal is softened, about 5 min.
- Add in egg and oil.
- Beat well.
- Add in flour mix, stirring only till combined.
- Stir in apple.
- Portion batter proportionately into 12 greased 1 1/2" muffin tins.
- Bake at 400 degrees for 20 min or possibly till lightly browned.
- Serve hot.
- Yield: 12 muffins.
