Smashed Potatoes

  1. Put potatoes in a medium saucepan of lightly salted water.
  2. Bring to a boil, reduce heat and simmer until tender, about 15 minutes.
  3. Drain potatoes well, reserving some of the liquid.
  4. Return potatoes to pan.
  5. Smash with a potato masher until fairly smooth, adding a little reserved water if needed.
  6. Add basil, garlic, shallot, salt and pepper and mix well.
  7. Serve hot.
