Beef Enchiladas
- 1 lb. ground beef or 1 lb. boneless skinless chicken breasts, chopped
- 1 cup TACO BELL Thick & Chunky Salsa, divided
- 1 pkg. (8 oz.) VELVEETA Mild Cheddar Flavor Shredded Pasteurized Process Cheddar Cheese Food, divided
- 10 flour tortillas
- Brown meat in large skillet; drain.
- Add 1/2 cup of the salsa and 1 cup of the VELVEETA; cook and stir on medium-low heat until VELVEETA is completely melted.
- Spoon 1/4 cup meat mixture down center of each tortilla; roll up.
- Arrange, seam-side down, in 12x8-inch microwavable dish.
- Top with remaining salsa and VELVEETA.
- Cover loosely with plastic wrap.
- Microwave on HIGH 4 minutes until VELVEETA is melted.
- Take a Shortcut: Substitute 1 pkg.

- LOUIS RICH Grilled Beef or Chicken Breast Strips for the browned ground beef.
- Mix strips, 1/2 cup of the salsa and 1 cup of the process cheese food in medium saucepan; cook and stir on medium-low heat until process cheese food is completely melted.
- Continue as directed.
