Beef Enchiladas

  1. Brown meat in large skillet; drain.
  2. Add 1/2 cup of the salsa and 1 cup of the VELVEETA; cook and stir on medium-low heat until VELVEETA is completely melted.
  3. Spoon 1/4 cup meat mixture down center of each tortilla; roll up.
  4. Arrange, seam-side down, in 12x8-inch microwavable dish.
  5. Top with remaining salsa and VELVEETA.
  6. Cover loosely with plastic wrap.
  7. Microwave on HIGH 4 minutes until VELVEETA is melted.
  8. Take a Shortcut: Substitute 1 pkg.
  9. (6 oz.)
  10. LOUIS RICH Grilled Beef or Chicken Breast Strips for the browned ground beef.
  11. Mix strips, 1/2 cup of the salsa and 1 cup of the process cheese food in medium saucepan; cook and stir on medium-low heat until process cheese food is completely melted.
  12. Continue as directed.
