Rice Muffins
- 1 12 cups flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 2 tablespoons sugar
- 3 tablespoons soft shortening or 3 tablespoons liquid oil
- 1 cup cold cooked white rice
- 1 egg, beaten
- 1 14 cups milk
- 12 cup cubed cheddar cheese
- Sift dry ingredients togther.
- Cut in shortening or stir in oil.
- Add rice, egg, cheese and milk; mix enough to moisten dry ingredients.
- Grease muffin tins.
- Fill muffin tins 3/4 full.
- Bake 425 degrees for 25 minutes.
