An Adventure in Quinoaland

  1. Rinse the quinoa thoroughly under cold water.
  2. Drain and place in a large pot.
  3. Melt 1tbs butter in a large saucepan over medium heat, and stir in the quinoa.
  4. Keep stirring until and the quinoa is very lightly toasted, about 3 minutes.
  5. Pour in the chicken broth, bring to a boil, reduce heat to low, and simmer until the quinoa has absorbed all the broth, about 10-15 minutes.
  6. Turn off heat, add 1tbs butter, fluff with a fork, and let cool.
  7. Drain and rinse corn and beans, then mix in with Quinoa.
  8. Mix together chopped red pepper, yellow onion, corn, black beans, cilantro, green onion, lime juice, olive oil, salt, pepper, cumin, onion powder, garlic powder in a large salad bowl.
  9. Lightly stir in the chicken and quinoa, and additional lime juice to taste, if desired.
  10. Adorn with a slice of melted cheese, and top with sliced avocado.
  11. Serve hot, warm, or cold!
  12. Ps: Great with chips!
