An Adventure in Quinoaland
- 1 1/2 cup Quinoa
- 3 cup chicken broth
- 1 cup Chopped cilantro
- 1/4 cup Yellow onion
- 1 cup Chopped Red bell pepper
- 1 cup Chopped Green Onion
- 2 tbsp butter
- 4 Juiced Limes
- 1 tsp ground cumin
- 1/2 tsp ground black pepper
- 1 tsp sea salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 3 tbsp Nutritional Yeast
- 1 can Black Beans - rinsed
- 1 can Corn - rinsed
- 2 tbsp olive oil
- Rinse the quinoa thoroughly under cold water.
- Drain and place in a large pot.
- Melt 1tbs butter in a large saucepan over medium heat, and stir in the quinoa.
- Keep stirring until and the quinoa is very lightly toasted, about 3 minutes.
- Pour in the chicken broth, bring to a boil, reduce heat to low, and simmer until the quinoa has absorbed all the broth, about 10-15 minutes.
- Turn off heat, add 1tbs butter, fluff with a fork, and let cool.
- Drain and rinse corn and beans, then mix in with Quinoa.
- Mix together chopped red pepper, yellow onion, corn, black beans, cilantro, green onion, lime juice, olive oil, salt, pepper, cumin, onion powder, garlic powder in a large salad bowl.
- Lightly stir in the chicken and quinoa, and additional lime juice to taste, if desired.
- Adorn with a slice of melted cheese, and top with sliced avocado.
- Serve hot, warm, or cold!
