Juniper Syrup

  1. In a small saucepan, muddle the juniper berries.
  2. Add the orange zest, cardamom pods and water and bring to a simmer.
  3. Stir in the sugar and simmer for 15 minutes.
  4. Let cool, then cover and refrigerate overnight.
  5. Strain the syrup into a jar, cover and refrigerate for up to 3 weeks.
