Lorraine's Baked Butternut Squash Recipe
- 2 butternut squash
- 1 acorn squash
- 1 1/4 c. butter
- 1/2 to 3/4 teaspoon cinnamon
- 1 c. brown sugar
- 2 to 4 Large eggs, beaten
- Salt and pepper to taste
- Heat oven to 350 degrees.
- Butter a casserole (9 x 11).
- Pare squash, remove seeds (throw away seeds).
- Cut squash into chunks and boil till tender; drain.
- Mash.
- Add in butter, salt and pepper and brown sugar.
- Beat Large eggs and add in to mix.
- Put mix in buttered casserole.
- Dot with butter mixed with a little cinnamon.
- Bake at 350 degrees for 30 min to one hour.
- Enjoy!
