Herbed Sweet & White Mashed Potatoes

  1. Preheat oven to 400o F. Pierce potatoes several times with fork; bake until
  2. tender, about 45 minutes.
  3. When cool enough to handle, peel and halve potato.
  4. lengthwise; discard skins and coarsely chop pulp.
  5. In medium bowl, combine.
  6. pulp, yogurt, parsley, rosemary, salt and pepper, mashing and whipping with
  7. potato masher or spoon until smooth.
  8. Serve immediately.
