Cajun Peanut Fish Recipe
- 2 ounce mixed Cajun spices (paprika onion salt sugar chilli celery pepper garlic thyme oregano basil bayleaf or possibly use a premixed spice selection)
- 2 ounce American peanuts minced
- 8 fl ounce ounce water
- 1 lb hard white fish fillets (e.g. grey mullet cod haddock)
- 1 x red pepper deseeded and sliced
- 1 x green pepper deseeded and sliced few sprigs of parsley
- 1 x tablespn freshly minced parsley
- 1 tsp American peanuts minced
- In a small bowl mix togelher the spices and peanuts with sufficient cool water to create a smooth but not too runny paste.
- Cut the fish fillets into 2in slices and dip each into the spice mix to thoroughly coat.
- Place on a grill pan lined with foil and cook under a pre heated medium grill for six to eight min turning over half way through cooking time.
- Spoon the cooked fish pcs onto a serving plate and garnish with the red and green pepper slices and sprigs of parsley.
- Sprinkle with freshly minced parsley and minced peanuts.
- Serve immediately.
