Easy Bake Strata

• 1 small onion, chopped
• 1/2 cup chopped red pepper
• 4 cups packed torn fresh spinach
• 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
• 2 Tbsp. chopped fresh parsley
• 6 eggs
• 3/4 cup KRAFT Shredded Mozzarella Cheese

1. Preheat oven to 375F.
2. Spray large skillet with cooking spray.
3. Add onion and red pepper; cook and stir on medium-high heat 5 min.
4. or until softened.
5. Stir in spinach; set aside.
6. Prepare stuffing mix as directed on package; stir in onion mixture and parsley.
7. Beat eggs; mix with stuffing mixture.
8. Pour into greased 8-inch square baking pan.
9. Sprinkle with cheese.
10. Bake 35 min.
11. or until firm.
12. Cool 15 min.
13. Cut into strips or squares.
14. Serve warm or at room temperature.
