Pork Chops with Citrus-Cucumber Salsa

  1. Section fruit over medium bowl.
  2. (See tip.)
  3. Set fruit sections aside.
  4. Squeeze juice from membranes into blender.
  5. Add dressing, 1/2 cup cilantro and sugar; blend well.
  6. Chop fruit and remaining cilantro; place in medium bowl.
  7. Add cucumbers, onions, chiles and 2 Tbsp.
  8. of the dressing mixture; mix lightly.
  9. Cook 3 chops in large skillet on high heat 1 min.
  10. on each side or until evenly browned on both sides.
  11. Remove from skillet.
  12. Repeat with remaining chops.
  13. Return all chops to skillet.
  14. Add remaining dressing mixture; cook on medium-low heat 8 min.
  15. or until chops are done (145 degrees F).
  16. Remove from heat.
  17. Let stand 3 min.
  18. before serving with the fruit salsa.
