Pork Chops with Citrus-Cucumber Salsa
- 1 pink grapefruit, peeled
- 1 orange, peeled
- 1/4 cup KRAFT Zesty Italian Dressing
- 3/4 cup loosely packed fresh cilantro leaves, divided
- 1/2 tsp. sugar
- 1 cucumber, peeled, seeded and chopped
- 1 green onion, sliced
- 1 serrano chile, seeded, chopped
- 6 bone-in pork chops (1-3/4 lb.), 1/2 inch thick
- Section fruit over medium bowl.
- (See tip.)
- Set fruit sections aside.
- Squeeze juice from membranes into blender.
- Add dressing, 1/2 cup cilantro and sugar; blend well.
- Chop fruit and remaining cilantro; place in medium bowl.
- Add cucumbers, onions, chiles and 2 Tbsp.
- of the dressing mixture; mix lightly.
- Cook 3 chops in large skillet on high heat 1 min.
- on each side or until evenly browned on both sides.
- Remove from skillet.
- Repeat with remaining chops.
- Return all chops to skillet.
- Add remaining dressing mixture; cook on medium-low heat 8 min.
- or until chops are done (145 degrees F).
- Remove from heat.
- Let stand 3 min.
- before serving with the fruit salsa.
