Easy Glazed Chicken Dinner
- 1 can (14 oz.) fat-free reduced-sodium chicken broth
- 2 cups quinoa, rinsed
- 3 cups small broccoli florets
- 4 small boneless skinless chicken breasts (1 lb.)
- 1/4 cup KRAFT Zesty CATALINA Dressing
- 1/4 cup orange juice
- 3 Tbsp. maple-flavored or pancake syrup
- 2 Tbsp. PLANTERS Sliced Almonds, toasted
- Bring broth to boil in medium saucepan.
- Stir in quinoa; cover.
- Simmer on medium-low heat 15 min.
- Add broccoli; stir.
- Simmer, covered, 3 min.
- Remove from heat; let stand 5 min.
- or until broth is completely absorbed.
- Meanwhile, cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 6 to 7 min.
- on each side or until done (165F).
- Remove from skillet; cover to keep warm.
- Add dressing, juice and syrup to skillet; stir.
- Bring to boil; simmer on medium heat 3 min.
- or until thickened, stirring occasionally.
- Place chicken and quinoa on platter.
- Drizzle dressing mixture over chicken.
- Sprinkle with nuts.
